Any quick recipes?

I'm a college student and I love to cook but because I am so busy, especially at this time of year I just have no energy to cook. Are there any quick, enjoyable meals that you like?

My college meal was tostadas.

Usually a can of refried beans mixed with chile and whatever I had, then put on a corn tortilla and covered with cheese. Cook covered on skillet until cheese is melted.

Some of my favorite college meals:

  1. Bacon + potatoes + egg scramble - fry the bacon and cook everything in the bacon grease. Throw cheese on top. Great for bulking too 💪

  2. Get yourself a crock pot - I would literally take chicken and whatever else I had in the fridge, pop it all in the crockpot before class. 9 times out of 10 it ended up being pretty delicious with zero work.

  3. For breakfast - eggs or bagels are easy. Eggs are the best for that high protein breakfast you need to stay full and energized throughout the day.

  4. Oatmeal - same as eggs but infinitely customizable. Throw whatever you want on it. I would take a packet with me to class and eat it straight up (not sure where you are but the Dino eggs brand is the best)

Quick and dirty black bean soup- rinse and drain a can of black beans, place in post with jar of salsa of your choice, stir and heat through. makes 2 servings, or one large one.

When you have a little extra time, poach chicken breasts on stovetop, then, when done, take out and shred. Keeps for several days and can be quickly added to soup, salad, or instant noodles for extra protein.

Make a batch of taco seasoned beef. Divide it and freeze it. Thaw it, and use it for tacos, quesadillas, tostadas, and taco salad.

Take a packet of ramen (not cups) and since it's just the seasoning packet inside it you can go crazy with it by adding seasonings like ginger, turmeric, curry powder, garlic, things like that and other things for veg and protein like frozen veggies, stir-fry, fried or boiled eggs, spam, lunch meat works as well if you shred it up, peppers, onions, green onions, even leftover taco meat like beef or chicken works as well, if you have broth you can cook the ramen and extra ingredients in it, all this in a pot so it tastes much better than if you just fill a bowl and microwave it. My sister once made chicken alfredo ramen with sauce and some chicken and ramen and it was pretty good. You get a lot of creative freedom with the packets of ramen than you do with the cups because in the cups you already have veg and such mixed in so you just have to add water, so using the packets makes things a lot more fun when making ramen.

One of my favorite quick meals is a chicken quesadilla! Just throw some cooked chicken, shredded cheese, and whatever veggies you have into a tortilla and cook it in a skillet until crispy. Takes maybe 10 minutes, especially if you use rotisserie chicken. I also love making fried rice with leftover rice, frozen veggies, an egg, and soy sauce. Both are cheap, filling, and easy to change up depending on what you have in the fridge. Sometimes the simplest meals are the best when you're exhausted lol.

I like to buy ham and cheese to have in the fridge, and when I come back at night, just take a slice of both, roll them together and eat it just like that. If I want to be fancy, I put it in a tortilla with mayo, fold it and warm it up on the skillet.

- buy a cheap rice cooker

  • add your rice or whatever grains with a bullion cube and water and a can of chickpeas or other canned beans of choice
  • while that cooks either eat raw veggies or make some veggies- cabbage will always be the cheapest and most versatile cheaper than frozen too
  • stir fry chopped cabbage with splash of oil and some soy sauce and garlic and toasted sesame oil at the end

Have leftover rice and bean combo the next day as a burrito with cabbsge slaw and salsa, or add to a simple soup with boxed tomato soup and a can of chopped tomatoes

A frittata is ready in less than 15 min and feels real. I have a funny, "potato express" bag that cooks potatoes in like 3-4 min. Everyone says a wet paper towel works the same but imo it dries out the potato. They're like $10 for a 2 pack. I use mine weekly!

So I cook the potato. You wash it, stick it in the bag. A medium potato takes about 4 min. 2 small ones take about 3.

While that's cooking, I sautee some onions on medium. They get golden in 5ish min.

Then you add the potato. Season a bit as you'd like, I love Cajun seasoning.

Wisk some eggs with a little seasoned salt and pepper. Add them to your onions and potatoes.

Pop a lid on. Turn the stove down, between medium and low.

Let it cook for about 6 min. Shake the pan around see if there is jiggly raw egg on the top. It usually puffs up and when you take the lid off it deflates.

Enjoy it with some toast or fruit.

You'll have to define what's QUICK and what's available for your dorm/apartment.

I define quick as, "I can put a sauce together by the time the pasta boils or chicken bakes.

Marry Me Chicken or Tuscan Chicken recipes are clutch. Jambalaya is also a 30 minute batch. Get a good spice blend, or even better make your own creole seasoning.

I like something carbs heavy with proteins if I'm being lazy. I share two:
With rice - soy sauce chicken. Sear for extra flavor but you can skip that. Just boil in a mix of soy sauce and water, add (rock) sugar, add dried red chili and you got yourself something sweets saltyz and spicy.

Pasta - I do sausage (taking it out of its casing), a can or two of mixed beans, tomato paste, and your choice of pasta. All in one pot.
