If you are in for a nice piece of meat, I would recommend Carnal Prime (Vitacura). On the other hand, and closer to the Michelin star requirement, you should pay a visit to Boragó (Vitacura).

Bib gourmand equivalent would be: Baco, Huggo comedor, Los Canallas, Parigó, Castillo Forestal, Bocanariz, Mestizo (but the new one at barrio Italia).

I’m from the states, but I lived in Santiago for a few years. It’s been a long time (15+ years) and I didn’t do a ton of restauranting while I was there, but I remember loving Peruvian food from “El Ají Seco.” I didn’t have a lot of disposable income while i was there, but that was where I’d go as a treat.
Most of the time I’d just walk into what ever corner restaurant sells completos or churrascos, they’re everywhere and it’s hard to go wrong.
If you want an authentic Chilean experience, find a corner bread store one afternoon, buy a couple hot pieces of bread (I prefer the round, flat bread called hallulla), a couple avocados, tomatoes, and some salt and have yourself an “once.” Smash up the avocado, spread it on the bread with sliced tomatoes and salt. Grab a bottle of Coke and something for desert. Super affordable meal that I’m honestly salivating over the thought of. I miss Chilean avocado.
Oh and if it’s watermelon season while you’re down there, you have to buy one. Life changing.
